It's all down to the design of your city - once you decide to use a huuuuge building like the fruit farm or later on maybe the granary farm, it's a fun task to restructure your town so no space is wasted. I leave out the costs and the size - if you think smaller is better because that makes the building more flexible, then YOU are not flexible :cool. The production is also boosted by enthusiastic population and by boosts of certain Great Buildings. When the Shrine of Knowledge is motivated, its production is not only doubled, but it also produces one forge point.
